Zero Waste, Vegan Pasta Aglio e Olio

A quick post to share an EXTREMELY simple pasta recipe.

Please note, all produce and herbs bought fresh from Food Lovers Market, oil was purchased on tap, pasta was carefully selected according to packaging. Also, I’ve very loosey goosey with my recipes, I probably wont be able to give exact measurement… Sorry about that.

Here goes, as seen in the Chef (The Movie) with Jon Favreau and Scarlett Johansson.

Pasta Aglio e Olio (Pasta with Garlic and Olive Oil.

  • Ingredients:
    Spaghetti of your choosing
    Half cup Olive Oil (Or less. Or more, it’s up to you)
    Parsley, lots of it. Finely chopped
    Fresh garlic. Lots of it. About 10 or 12. Or you can use the store bought minced garlic. Finely chopped.
    Onion, finely chopped (This is my own doing, not in the original recipe)
    Chilli Flakes. Approx one teaspoon. Can be more if you like the heat.
    Salt & Pepper to taste
    Parmesan (I left this out.)

Prepare pasta as per instructions and drain, keep some of the liquid aside.Approximately half a cup.
Heat olive oil and add onions, garlic, chilli flakes, salt and pepper. Make sure it doesn’t burn (I burn stuff. Very easily…)

I’ve made this recipe many times, sometimes I add the parsley after added the pasta. Sometimes I add it in with the garlic and chilli flakes. This image shows the second scenario; parsley before pasta. I found parsley AFTER pasta is nicer.

Add the pasta water and simmer for a bit. Add the pasta directly to the pan. Remove from heat, add parsley and toss thoroughly. (If you’re using parmesan, this would be the opportune moment to add that too.) The original recipe calls for freshly squeezed lemon juice, but I haven’t tried that yet.

Dish up.
